Ingredients:
2 cups flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 cup cocoa powder
10 tbl butter, room temperature
1 cup brown sugar
6 tbl milk
1 tsp vanilla
2 eggs
1 cup old-fashioned oats – divided.
1 cup coconut, shredded, sweetened or unsweetened
Directions:
Oven 350 degrees
Measure 1/2 cup oats and process in food processor until fine.
Add together flour, processed oats, cocoa powder, baking soda, baking powder, salt and cinnamon in a medium bowl. Cream butter and sugars in a stand-up mixer until well combined. Beat in the vanilla, milk, and eggs until light, about 2 minutes. Process in the flour mixture. Add the reserved 1/2 cup of oats and coconut until incorporated.
Drop tablespoonful onto a parchment lined baking sheet.
Bake for 12 minutes, turning baking sheet around after the first 6 minutes.
Let cool for a few minutes on the baking sheet then move to a wire rack to completely cool.
