Ok, they win. These just simply win! These light, sweet, and fluffy donuts with blueberries scented with, lemon, vanilla, and little speckles of poppy seeds are too easy and delicious to not be habit forming. You’ll make them again and again and again! Refreshing, tangy, sweet, and baked!
Now let’s do it!
For the Donut:
1/4 cup butter
1/4 cup vegetable oil
1/2 cup granulated sugar
1/3 cup brown sugar
2 eggs
1 teaspoon vanilla extract
3 tablespoons lemon juice
1 tablespoon lemon zest
1 1/2 teaspoon baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon cinnamon
2 2/3 cups flour
1 teaspoon poppy seeds + more for topping
1 cup milk
3/4 cup blueberries
Getting Ready:
Preheat oven to 425 degrees. Lightly grease two doughnut pans.
To Make The Donuts:
In a medium sized mixing bowl, beat together the butter, oil, and sugars until smooth.
Add the eggs, vanilla, lemon juice, and zest, beating to combine.
Stir in the baking powder, baking soda, cinnamon, poppy seeds, and salt.
Stir the flour into the butter mixture alternately with the milk, beginning and ending with the flour and making sure everything is combined. Stir in the blueberries, try not to over-mix the batter.
Spoon the batter into the lightly greased doughnut pans, filling the doughnut wells to about 1/4″ shy of the rim.
Bake the doughnuts for 8 to 10 minutes. Remove them from the oven, and wait 5 to 7 minutes before turning them onto a rack.
Once the donuts are completely cool, dip them into the glaze. Return to the wire rack and sprinkle with poppy seeds. Allow the glaze to set for about 30 minutes before stacking or serving.
To Make The Glaze:
1 1/4 cups confectioner’s sugar, sifted to remove lumps
1 tablespoon light corn syrup
1 tablespoon melted butter
1 to 2 tablespoons of milk
1 tablespoons lemon juice
1/2 teaspoon lemon zest
1/2 teaspoon vanilla extract
Stir the ingredients together, adding extra liquid or confectioners’ sugar to adjust the consistency as needed.
