Hello, Sunday baking friends!
There are some things in life that you just cannot wait for. My Custardy Plum Raisin Squares are one of them. This cake is pure magic since it’s so easy to throw together. All you need are eggs, butter, milk, flour, sugar, fresh plums, and a sprinkle of raisins. You take all these fabulous ingredients and bake with slivered almonds on top. With my kitchen smelling heavenly while the cake is baking, I patiently watch the oven timer. It, of course, feels like a lifetime!
3 plums, halved, pitted, sliced
1/2 cup flour
1 teaspoon baking powder
2 tablespoons raisins
Pinch of salt
1/2 cup brown sugar
2 tablespoons butter, melted
1 1/2 teaspoons almond extract
1/4 cup + 2 tablespoons milk or half n half
1 tablespoon almonds, sliced or slivered
Preheat oven 400 degrees.
Butter and saddle bottom with parchment paper in 8 x 8-inch baking pan.
For the Cake:
Remove the pits and slice the plums about 1/16th inch thick. Set aside.
In a small bowl, whisk flour, baking powder, and raisins to blend. Coating raisins with flour mixture.
In a stand-up mixer, whisk eggs, sugar, salt, beat for 2 minutes or until sugar is dissolved. Add melted butter, milk and almond extract, until mixed. Beat in flour mixture and stir in sliced plums.
Turn the batter into prepared pan and smooth out the plum slices.
Sprinkle with almond slivers.
Bake 40-45 minutes or until the cake comes away from sides.
Dust with confectioners sugar.
