Almond Lace Cookies

Happy Holidays!

Celebrate the holiday season with these delicate, crisp, lacy perfections.  Lace Cookies or better known as Florentines are named after the lace-like holes that form as they bake. These cookies are lighter than air, buttery toffee-like, a touch of citrus, and a delicious almond flavor. Wonderful on their own, lace cookies are also fantastic with just a skosh of chocolate filling that makes them irresistible.

These lacy cookies may appear fancy and difficult to make, but they are actually very quick and easy.

Meet ya in the kitchen!

For the cookie:

1/2 cup flour

1/2 cup firmly packed brown sugar                                               

1/2 cup uncooked old-fashioned oats

1/2 cup almonds, toasted and ground

1 1/2 teaspoons freshly grated orange peel

1/2 teaspoon salt

1/4 teaspoon baking powder

6 tablespoons butter, melted

1 teaspoon almond extract

2 tablespoons light corn syrup or honey

2 tablespoons heavy whipping cream

4 oz bittersweet chocolate, chopped fine

Let’s bake!

Heat oven to 375 degrees.  Adjust oven rack to the upper third of the oven.  Line cookie sheet with parchment paper. Set aside.

Combine flour, brown sugar, oats, almonds, orange peel and baking powder in a medium bowl.  Combine melted butter, corn syrup and whipping cream in a small bowl.  Stir butter mixture into flour mixture; mix well.

Refrigerate the dough for 20-30 minutes.

Drop teaspoonful of batter, 4-inch apart onto a prepared cookie sheet.  Bake for 6-8 minutes or until the cookies are golden brown all over and slightly darker at the edges.  Transfer the baking sheets to a cooling rack and let sit until the cookies firm up about 5 minutes.  Using a spatula, gently transfer the cookies to wire racks until cool. Store the cookies in an airtight container at room temperature for 2 weeks, or freeze for up 2 months.

 

Chocolate Filling:

Microwave 3 ounces of chocolate in a bowl at 50 percent power, stirring frequently, until about two-thirds melted, 1 to 2 minutes.  Remove bowl from microwave, add remaining 1-ounce chocolate, and stir until completely melted.

Spread a thin layer of melted chocolate onto the flat side of half of the cookies.  Top with remaining cookies to make a sandwich.
