Winter is here and in most places it’s brutal outside. On these gloomy winters days, the cold turns you to your snuggly blankets and binge-watching Netflix in hopes of Spring. Is it any wonder that I’ve had a craving for chocolate that won’t go away? Just the sound of chocolate is warming.
Step out of the cold with a warming dose of triple-chocolate in my Hot Chocolate Fudge Pudding Cake. This moist, rich cake delivers a comforting chocolate hug. A layer of moist cake forms over a thick hot fudgy pudding as the cake bakes. The subtle flavors of cinnamon and coffee add to the complex depth of the cake. With the addition of three types of chocolate, butter, and milk make a decadent and easy one bowl cake.

1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup cocoa powder, sifted and divided
1 cup of flour
2 teaspoons baking powder
1/2 teaspoon salt
4 tablespoons butter, melted
1 egg yolk
2 teaspoons vanilla extract
1/2 cup chocolate chips
1/4 cup white chocolate chips (optional)
1 tablespoon instant coffee
1 cup boiling water
Ice cream or whipped cream
Adjust oven rack to middle position and heat oven to 350 degrees. Spray or grease an 8-inch square glass or metal cake pan with cooking spray.
For the Cake:
Whisk 1/2 cup of sugar with 1/4 cup of cocoa in a small bowl, set aside.
In a larger bowl, add 1/2 cup brown sugar, 1/4 cup cocoa powder, baking powder, cinnamon, and salt. Whisk together milk, butter, egg yolk, and vanilla in a medium bowl until smooth.
Stir milk mixture into flour mixture
until just combined.
Fold in chips.
Scrape batter into prepared pan and spread evenly.
Sprinkle reserved cocoa mixture evenly over the top.
Gently pour boiling water mixed with instant coffee,
over the cocoa. DO NOT STIR.
Bake until the top of cake looks cracked, fudge is bubbling, and a toothpick inserted into cake area comes out with moist crumbs attached about 25-30 minutes. Cook for 10 minutes. Serve with ice cream or whipped cream.
To change things up, add additional 1/2 cup of mini marshmallows, nuts or dried cherries when adding chips.
