Hello friends!
Chocolate in any form is pretty spectacular: chocolate cookies, chocolate ice cream, chocolate cake, and especially fudgy chocolate brownies! When baking a pan of brownies, I usually cut mine into nice large squares and then regret eating so many. While enjoying some brownie squares, I thought to make them into one bite chocolate morsels to satisfy my addictive chocolate cravings.
Chewy, moist, and gooey with cocoa powder, dark chocolate, and semi-sweet chocolate chips are my flavorful brownie bites. So delicious that one small bite satisfies!

Ingredients:
7 tablespoons butter
4oz dark 70% chocolate
2 tablespoons instant coffee
2 teaspoons vanilla
1/2 cup brown sugar
1/4 cup granulated sugar
2 eggs
1 cup cocoa powder
7 tablespoons hot water
3/4 cup flour
1/2 teaspoon salt
1/2 teaspoon baking soda
Pinch cinnamon
1 cup semi-sweet mini chips

Directions:
In a microwave-safe bowl add butter, dark chocolate, and instant coffee. Set the bowl over a saucepan of simmering water or place in a microwave set on melt. Stir occasionally until everything is melted and add vanilla. Set aside.
In a small bowl add the cocoa powder and hot water and stir until mixed. Set aside.
In a bowl, sift together the flour, salt, and baking soda.
Working with a stand mixer, preferably fitted with a paddle attachment, or with a hand mixer in a large bowl, add the melted chocolate mixture, cocoa powder mixture, and sugars and beat until smooth. Add eggs, one at a time and beat for 1 minute. Reduce speed and add the dry ingredients, chocolate chips, and a pinch of cinnamon, mixing until the flour and spice disappear. Refrigerate for at least 1 hour. Pro-tip: The batter is very wet, hardening helps to scoop into muffin tin.
Preheat oven to 350 degrees.
Generously spray a (24-well) mini cupcake tin with baking spray.
Scoop or spoon a tablespoon amount of batter into each muffin tin. Now bake for about 14-15 minutes, they will look slightly undercooked. Let them cool down for 15 minutes before you try to remove. I have found that giving each brownie a twist before I remove them helps!
