The end of summer isn’t necessarily a bad thing. Leaves will be changing colors as cool weather approaches but, summer’s departure means fall is up next, along with apple season baking!
Since it’s officially apple season, and I love apples. Craving for these crisp, rosy apples made it easy to develop this quick, easy apple blondie with apple cider caramel.
I recall as a child, loving candy apples. Bitting through its creamy, butterscotch caramel coating, atop of a crisp, red, juicy apple. Why not add these wonderful flavors and textures in a rich, moist blondie?
Chewy and richly butterscotch flavored blondies are a nice change from fudge brownies. Brown sugar and melted butter make a chewy, dense blondie, loaded with chunks of hearty apples, white chocolate chips, and finishes with swirls of gooey caramel.
Preparing the apple cider caramel is so easy using caramel candy squares, or better yet, store-bought will do as well.
These rich apple blondies with layers of fall flavors capture the sweetness of candy apples in a dense, delicious, and satisfying blondie.

For the blondies
1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
12 tablespoons butter, melted
3/4 cup brown sugar
1/2 cup granulated sugar
1 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmeg
2 large eggs
2 teaspoons vanilla
1 1/2 cups apple, peeled and diced
3/4 cup white chocolate chips
For the caramel
10 soft caramel candy squares
3 tablespoons heavy cream
2 tablespoons apple cider or apple juice
In a small saucepan over medium-low heat, melt together caramel candies, heavy cream, and apple cider, stirring constantly until melted and smooth. About 10 minutes, set aside.
Preheat the oven to 350 degrees. Lightly grease an 8″ x 8″ pan. To ensure that the bars release from the pan without sticking, line your greased pan with parchment paper, and grease the parchment paper.
Combine the melted butter, sugars, and spices in the bowl of a stand-up mixer or a hand mixer, until sugars have dissolved. Add the eggs one at a time, then stir in the vanilla and salt.
Combine the flour, baking powder, and baking soda in a separate bowl. Adding the dry ingredients to the butter-sugar mixture, stirring to combine. Do not over mix.
Fold in the apples and white chocolate chips until combined.
Spread half of the batter evenly into the prepared pan and drizzle half of the caramel on top of the batter. Spread evenly the remaining batter over the caramel, then drizzle the remaining caramel and gently swirl with a knife.
Bake the blondies for 50-55 minutes, until they’re golden brown on the edges and top.
Remove the blondies from the oven and allow them to cool in the pan for 20 minutes, before cutting and serving.
