Tis’ the cranberry season!
They appear on our holiday table spreads in cranberry sauce, relish, chutney, cakes, and pies. Then they are forgotten until next year, I don’t understand!
Nantucket Cranberry-Apple Pie involves so few ingredients and so little effort. Delicious, tart cranberries are the star of this super-simple, easy, crustless pie. Mixed with crisp chunks of sweet apples, nuts, and sprinkled with sugar to balance the cranberries sweetness and tartness, making a saucy bottom for its buttery top.

For the Bottom Layer:
1 tablespoon melted butter
2 cups cranberries, frozen or fresh
1 1/2 cups apple, peeled, cored, and cut into chunks
1/3 cup granulated sugar
1 teaspoon orange or lemon zest
2 teaspoons orange or lemon juice
1/2 cup walnuts or pecans, chopped
For the Next Layer:
3/4 cup (1 1/2 sticks) butter, softened
3/4 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1/4 teaspoon almond extract
For the Topping:
1 cup flour
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
Final topping
1 tablespoon granulated sugar
1/2 teaspoon cinnamon
Preheat the oven to 350 degrees. Lightly grease a 9-inch cake pan or a 10-inch pie plate. Melt 1 tablespoon butter, and drizzle it into the bottom of the pan.
To make the bottom: Spread the cranberries, chopped apples, and nuts of the pan. Sprinkle with sugar, orange zest, and orange juice and mix to combine.
To make the topping: In a mixing bowl, beat together the butter and sugar on medium-high speed until pale and fluffy, about 3 minutes. Add eggs, vanilla, and almond extract and beat until combined. Reduce speed to low add flour, spices, and salt, mix until combined.
Spread the batter over the cranberry mix, using a spatula or your wet fingers.
Sprinkle coarse cinnamon sugar atop the batter.
Bake the cake for 40-50 minutes, until a cake tester inserted into the center comes out clean of batter.
Remove the cake from the oven. Sere warm, or at room temperature; just as it is, or with whipped cream or ice cream.
